Day 4. Lemon Meringue Pie.

First and foremost I would like to apologize for my absence. I have just been way too high and way too busy with work to update much, but today I made some lemon meringue pies. I would give you all the recipe but it's a family recipe and I want to keep it that way. Anyways I really enjoyed making these pies because I didn't think that I would do a good job and it was my first time making any kind of pie. I made 3 and tasted one of them and it tasted exactly like my moms. So that made me really happy. The only thing I think I might have messed up a little bit is the meringue. I never know when egg whites are stiff/peaked. I guess that is something I will learn as time goes by and as I bake more and more. Patty enjoyed the pie very much also she said it was "tart, tangy, and delicious." Here are a few pictures for your enjoyment :-]

I'm not sure what my next dish will be but you all will be the first ones to know!

Until next time.

Day 3. Beef Bourguignon

So this by far is one of the most complicated things that I have EVER attempted to make. Damn recipe made me hate life. It is a Julia Child recipe so I didn't expect it to be easy of course but you can find the link for the recipe right here: http://abcnews.go.com/GMA/recipe?id=8222804

This Stew takes about 3 or 4 hours to make with at least an hour prep time. This dish was a pain in the ass to say the least. You have to cube the beef and then dry them piece by piece. At least that is what I did.  I am sure there was an easier way to do it but I couldn't figure it out. This took forever so if anyone does plan on making this stew I would be sure to make it either a day in advance or be prepared to be in the kitchen for a few hours. This recipe was seriously so confusing but everything turned out right in the end. I would recommend reading the entire recipe before attempting it. I didn't think this would be a complete food blog with out doing a Julia Childs recipe so this was one of the first one I wanted to try because in the movie Julie&Julia everyone was orgasming over this stew and so was I and my best friend. She asked me to make it and finally a month after watching the movie we got all the ingredients to do so.

The taste is fabulous! It's so flavorful and light. The onions and mushrooms and carrots all go together very well with the beef and it has a subtle wine taste but that adds to the flavor even more. Sad to say the children didn't really enjoy it but I feel this stew has more of an "adult" taste. I enjoyed it very much and so did Patty. I would definitely make this stew again in a heartbeat but will plan better next time.

Here are some pictures.

Day 2. Spinach Lasagna

Today I have decided to make a Spinach Lasagna. You can find the recipe right here: http://allrecipes.com//Recipe/spinach-lasagna-iii/Detail.aspx
This was an easy recipe nothing too difficult that any other person couldn't do. I got the idea to make this because my friend Patty saw it on a show that she was watching and asked me if I could attempt to make it and i of course said yes. The only problem I had was finding Ricotta cheese so I substituted Ricotta for Feta cheese. It takes an hour for this dish to cook. It's a long wait for a hungry family, but totally worth the wait. This dish has a sweet taste because of the tomato paste and everything ties together very nicely. I would recommend this dish if you were serving a large group of people. It is sure to satisfy.

Here are some pictures to document the process.

Day 1. Pumpkin streusel muffins

Today is day 1 of my 100 recipes in 100 days.  I have decided to go with a nice Pumpkin streusel muffin from this website right here: http://www.pumpkinnook.com/cookbook/pumpkinmuffin_02.htm I am going to have to thank my friend Patty for showing me this recipe. It was very easy to put together and easy to read instructions so no confusion on what you should be doing. My favorite part about this recipe was the topping. Walnuts, butter, and cinnamon can't get much tastier than that. The smell that they omit whilst cooking is amazing and it fills up your entire house. The muffins rise beautifully also. The topping makes it look like a professional muffin at best.

The muffins are nice and moist and the cream cheese compliments the pumpkin flavors very well. They're not overly sweet and if you make them for your little ones they will be sure to be begging for more.

Now here are some photos that I took to document the baking process.

this is the first part of making the muffins putting the cream cheese in the batter.
adding the rest of the batter to the top of the muffins.

Taking a look at the inside.

These muffins were really easy to make and very VERY delicious. I would definitely recommend this recipe to anyone that is a lover of muffins.

Until next time!

The start of my new FOOD blog

Hello my name is Meaghan I am 22 years old and I will be using this blog to chronicle my journey of cooking 100 recipes in 100 days. These recipes will range from very basic items to advanced recipes that I have never done before. I am in no way shape or form a professional cook and have not even gone to school for cooking but this will definitely help me see if it's something that I truly want to pursue.

I love the look on people's faces after they try something that I have made. It's the best feeling ever and I'm excited to share this will all of my fellow foodies. I am going to put my heart and soul into this and I will be happy to have finally accomplished something I didn't think that I would ever be able to do. I will tell you all about my triumphs and disappointments and I am hoping that I have more triumphs than defeats. I will also be including pictures too so it shall be exciting for all of us.

I don't think that I will be using a specific website or cook book for my recipes but I will include links when I do use websites. Most of the recipes will either be from epicurious.com or allrecipes.com great websites and I have made great things off of both. It seems like epicurious is more for the advanced cooks. I am ready to challenge myself and learn new things. I hope you all will enjoy this wonderful food adventure with me.

Well until next time!
